Appetizers
Potage Faubonne
Hearty bean and leek soup made with chicken stock, pancetta, and herbs.
 
Cranberry and Spinach Salad
Spinach tossed in sweet sesame and poppy seed dressing with sundried cranberries and toasted almonds.
 
Prosciutto and Melon
Very thin sliced Prosciutto wrapped over ripe cantaloupe and honeydew melon slices served with Gruyere cheese.
 

Entrées
Poached Opah with Pineapple Salsa
Fresh Opah fillets are poached in white wine and pineapple juice then served with a sweet and spicy salsa made with diced pineapple, bell peppers, fresh herbs, and hot peppers.  This dish will be best paired with a fruit forward but full bodied white like our new White Knight Viognier.
 
Coq au Vin
Free range chicken is braised in chicken and beef stock with bacon, mushroom, and onions.  I like a light bodied red with some spice to cut through the heaviness of this dish such our Seghesio Sonoma County Zinfandel.
 
Bolognese Manacotti
Pasta sheets stuffed with a rich sauce made with ground beef, pork, and lamb baked with  parmesan, ricotta, and Fontina cheeses and served with marinara.  Try a bottle of Antinori Peppoli Chianti Classico with this delicious pasta dish.
 
Buffalo Short Ribs with Polenta
Bison short ribs are braised in red wind and served in a traditional red wind wine demi glace served over grilled polenta.  This dish is best suited to a hearty red wine like Veremonte Primus from Chile or Beringer Alluvium from Knights Valley.
